WINEMAKING AND MATURATION
Destemming, preparation of the pied-de-cuve about 10 days before harvesting and added to the crushed grapes. Spontaneous fermentation without added yeasts and maceration with the skins for approximately 35 days at a controlled temperature.
Minimum aging of 18 months in Austrian oak, then transferred to cement tanks until bottling.
