WINEMAKING AND AGING

Destemming, preparation of a pied-de-cuve about 10 days before harvesting and added to the crushed grapes. Spontaneous fermentation without added yeasts and maceration with the skins for about 35 days at a controlled temperature.
Minimum aging of 18 months in Austrian oak, then transferred to concrete tanks until bottling.
